A mushroom, that grows underground: how could it become one of the most refined and sophisticated high cuisine ingredients? It does not have the beauty of flowers, the sweet fruit flavor, and it does not grow in front of your eyes. And so it uses a very powerful “weapon”: it is capable of emitting molecules that are able to spread in the soil and emerge on the surface, where other living beings are driven crazy, dogs and pigs in the first place.

The aroma of truffles is very complex, it arrives directly in an almost irrational part of our brain: it unconsciously remains hopelessly fascinated.

We are therefore blindly attracted to truffles, and we could not understand why: it’s like Love.
