The periodic change of the menu is due not only by our will to vitiate you, but also by a true philosophy of Chef Mauri. One of the regulating principles of his work is seasonality!
It reveals us:
I love seasonality. For this reason, I change the menu every two / three months. I want my customers to have the opportunity to try products that are always fresh and in line with what Nature can offer us. For the summer menu, I decided to work simple and with not too demanding raw materials, but always in an innovative and original way, always combined with our “landlord”: truffle.
Here, then, for the next period you can savor for example chervil garden, Cantabrico’s anchovies, Sycilian shrimps, paprika’s mayonnaise and fresh truffle; beef tartare, white peaches, radish and fresh truffle. Or ravioli, ricotta cheese from Seirass, zucchini flowers, Champagne sauce and fresh truffle or lobster, mango, crunchy celery, sapphron and fresh truffle.
