Let’s start with something easy.

There are many species of truffle, but the most precious is the Alba white truffle, also known as Tuber Magnatum Pico, which is also the largest one. Where does it grow? In Piedmont the largest quantity, but can also be found in Lombardy, on the hills of Oltrepò Pavese, in the mantovano. You have to be very lucky to find it in Central Italy!

But do you know how to preserve white truffle? Once rice were used, which is known to absorb moisture, while today it is advisable to keep it wrapped in absorbent paper and in a cool environment at a temperature of 3 to 6 degrees.
There’s also an Association for Alba’s truffle: the National Association for the promotion and diffusion of the culture of this valuable mushroom (we are sure you knew it was a mushroom). Quality is determined by expert judgment, men and women, specially trained.
