Summer truffle. Harvest end.

Truffle harvested during summer  is called Scorzone or Summer Truffle (Tuber aestivum Vittadini), and has black warty rind with large pyramid warts, and a pulp with a color ranging from yellow to bronze with arborescent light and numerous veins, which disappear during the cooking process.  Sectioned, it shows elliptical spores, irregularly alveolar, dark. It is variable in size up to a small orange, but can reach 500 grams of weight. The smell is slightly aromatic, the taste is delightful and less intense than the other types of truffles.
The harvest is almost over, as it runs from the last Sunday of May to August 31st, so we are ready to welcome the latest specimens in our kitchens and our recipes.
