这可能是我与生俱来的想法,我的父亲与爷爷都烧得一手好菜,我以他们为榜样,通过仔细观察,不断探究传统佳肴背后的秘密与技艺。15岁时,我第一次离开家乡,独自踏上了夏季求职之旅,这段经历虽然十分辛苦,但却让我找到了创业的方向。
- 您为 T&F 打造的众多佳肴中,哪一道最让您感到骄傲,为什么?
我对所有菜品都非常满意,以改良版奶酪胡椒细面为例,我们非常擅长革新罗马传统佳肴。手工甜点系列尤令我感到骄傲,每天,我们都从零开始,亲手制作精美甜点。
- 餐厅最受欢迎的一道菜是什么?您认为原因是什么?
当然是奶酪胡椒细面与 Tartufi&Friends 烩饭,同时,我们的普切塔面包配自制酱汁、自制巧克力小蛋糕也非常受欢迎。这几道菜是我们的招牌菜,它们无可取代。

- 在您看来,意大利与外国顾客在口味上有什么区别?
令我惊喜的是,外国顾客非常乐于尝试新口味,喜欢征求我们的建议,而意大利顾客则更为挑剔,他们清楚地知道自己要什么。
