Alongside great classics revisited in summer key like chef Corsini’s “uovo al tegamino“, our seasonal menu includes dishes created to represent the essence itself of summer, with their freshness and their flavors: alive, essential.

What better than a tartare represent the beautiful days and the chance to taste the true essence of the selected ingredients? Imagine if the tartare is made of the best quality possible of tuna. Here is the hymn to the sea and the Sun signed by chef Mauri: Mediterranean red tuna tartare, mustard, broad beans, infusion of wild mint and fresh truffle.

No cooking, just a wise mix of selected ingredients and the perfect tuna cutting, strictly with a knife and so as not to ruin the fibers.

Chef comment:The tuna tartare is a really delicate and fresh dish, very suitable especially for the spring and summer season. I love tartare in general, both in the meat and fish version, never missing in my menus and in my kitchen. In this version, I used a very fresh Mediterranean red tuna, I enriched the dish with mustard, fresh broad beans, an infusion of wild mint to be poured over the tartare and our unmissable fresh truffle.
