We talked together many times about truffle, its properties, the best way to taste it, its scent and taste, curiosity about its history.
But do you know that in nature there are about 100 types of truffles? Many, yet only 9 of these are edible. The edibility is given by its organoleptic characteristics and the law clearly defines which truffles can be tasted and which can not.
Precious Black Truffle or Norcia Black Truffle (Tuber melanosporum Vittad.)
Black Winter Truffle or Black Trifola (Tuber brumale Vittad.)
Summer Truffle or Scorzone (Tuber aestivum Vittad.)
Uncinato Truffle or Winter Scorzone (Tuber uncinatum Chatin)
White Truffle or White Trifola (Tuber magnatum Pico)
Bianchetto or Marzuolo truffle (Tuber albidum Pico or Tuber borchii Vittad.)
Muscat Truffle (Tuber brumale v. Moscatum)
Ordinary Black Truffle or Bagnoli truffle (Tuber mesentericum Vittad)
Smooth Black Truffle (Tuber macroscopum)
Before discovering the interesting characteristics of each of these types, let’s remember what are the 4 basic parameters that each truffle collector describes as essential for the recognition of a truffle:
Perfume: peculiar and unique for each type
Aspect of the peridium, or the external part
Appearance of the gleba, or the inside
Harvesting period, as each type matures and is collected in well-defined times of the year.
