07 Oct White gold at Alba: from white truffle fair to Tartufi & Friends
With the start of the harvest, the Alba White Truffle Fair is back again, this year in its 89th edition. Alba white is the truffle par excellence, the “model” from which all others can only take inspiration, and grows in the territories of the Langhe, Roero and Monferrato, recognized World Heritage by UNESCO.
The fair period runs from October 5 to November 24, and includes cooking shows, dinners prepared by star chefs, sensory analysis of truffles, debates, tastings, and of course the World Market, where it will be possible to buy white gold.
Perfume, poetry, taste, mystery: this is the white truffle. Let’s do a short identikit:
Color: milk white
Dimensions: even considerable
Bouquet: accentuated, with notes of cheese and garlic
Taste: heady, slightly spicy similar to parmesan cheese
Preparation: raw, lamellated, on non-complex and non-aromatic dishes
Ideal on: meat tartare, fried egg, white tagliolini, fondue
